Chocolate cake, like this Super Moist Chocolate Cake, is an old standby in an Amish home. I’ve dropped in unexpectedly and unannounced to Amish homes before, and there’s often a fresh chocolate cake just sitting there waiting for a visitor to arrive.
Why a chocolate cake?I think the answer is pretty obvious… Chocolate is just something that most people like, it is sweet, it’s not difficult to make, and it can be quick. At its best chocolate cake is very moist and it’s just a "stir and bake" cake. Cover it with a simple frosting and you have an amazing dessert for not a lot of effort.
Chocolate cake recipes in Amish kitchens are about as plentiful as casserole recipes. Most recipes are incredibly similar, but they all have slight variations. This recipe, which comes to us from an Amish woman in Minnesota, distinguishes itself by not having eggs, but, instead, mayonnaise. Which is essentially eggs. Just in a different form. This cake also has a splash of coffee in it, so you get a hint of mocha, but not overpowering. Cover the cake with a white frosting and you have instant cake for company.
Cakes like this are also go-to material when it comes to church gatherings, potlucks, and picnics. Cakes like this are very portable and easy to transport, even in a bumpy buggy ride. Pies can collapse and cookies can get tossed around, but a cake like this will stay in good shape even on a long buggy ride.
Oh, and by the way, this recipe also makes a super birthday cake. Very moist and easy to cut. And, yes, the Amish, as a general rule, do celebrate birthdays. Cake and a few candles are very much in tradition in all but the most conservative communities.

Sift together the dry ingredients first.
Then cream in the mayo. Hmmm, I'd have to think the mayo you use might make a slight difference in taste? We have gravitated towards Berman's (Aldi brand), it's got a nice zip, but so does Duke's.
Stir in the coffee...hmmm, Folgers? Maxell House? Starbucks? You choose...

This looked so interesting that I made it this afternoon. I halved the recipe and it fit perfectly in an 8" round cake pan. The batter looked very sparse, but it rose great. It must be the eggs in the mayonnaise that give it the leavening power. I frosted it and will serve it after dinner tonight. Thanks so much.

Quick question: do you taste the coffee flavor in the finished product? If so, can the coffee be omitted?

Jennifer, it's not overpowering at all in this recipe, but it is there...just omit, but one of our readers has a good idea, replace with hot chocolate if you are able.

I have made something simular in the past... instead of coffee I use hot chocolate that has been cooled off a bit.. my grandchildren call it grammys super moist cake...
