Amish Peanut Butter Cookies

A good peanut cookie is sometimes difficult to find.  Many of them are too dry, too crumbly or just not peanut buttery enough. One of the best peanut butter cookies I’ve even tasted, however, (I guess I am biased) is The Amish Cook’s recipe.  It’s full of flavor, easy to make, and holds together nicely. I’ve made it a couple of times and always had wonderful results. I hope you will too!  Don’t these look amazing?  Big, chunky, peanut butter-infused cookies! Yum! By the way, this photo is of peanut butter cookies that I made.  Lovina’s usually look a bit more uniform and are a touch thinner, but I like a big, chunky cookie:) You can sort of experiment with the size and thickness you prefer. Either way,. this is a good recipe!

PEANUT BUTTER COOKIES

1 cup shortening

1 cup white sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

1 cup peanut butter

3 cups all-purpose flour

2 teaspoons soda

1 /2 teaspoon salt

DIRECTIONS: Preheat oven to 350 degrees. In a large mixing bowl, cream shortening, sugars, eggs, and vanilla until thoroughly mixed (editor’s note: while Amish cooks would not have an electric mixer, one can be used here on the lowest setting). Stir in peanut butter, flour, baking soda, and salt. The batter will be thick and should be stirred vigorously with a wooden spoon or kneaded with your hands until everything is thoroughly mixed. Drop by heaping tablespoons onto ungreased cookie sheets. Press the cookie dough with the back of a floured fork to make a criss-cross. Bake for 12 to 14 minutes or until brown on edges, but undone in center. Take out and leave on the cookie sheet for a few minutes before transferring to cooling rack.

          • I did use Amish peanut butter. It was all natural and wasn’t a smooth peanut butter. I wasn’t too sure about them. I was afraid they would be dry, but it all worked out. The recipe is a keeper. ☺
