This is a post that I usually share once a year and I end up updating it with little diary-like vignettes...not sure why.....You'll see what I mean when you read the excerpts below:
AMISH PEPPERMINT BROWNIES - 2013 Here in southwest Ohio we are hunkered down indoors on a frigid wintery weekend. About 5" of snow fell in our hometown along with a glaze of ice. So we are just staying in tonight in front of a roaring fire, Our 10-week old daughter, Aster (can she REALLY be 10 weeks old this Sunday???), got to see her first major snowfall. She did seem to alertly follow the flakes as they furiously fell yesterday. It was cute to watch her watch. That's what I am finding neat about being a parent is that everything is new again.
Geez, I mean, looking back at writing that, it all seems like a blur. I can barely remember her looking at the flakes. Those first 10 weeks seemed like one sleep-fog filled blur. Okay, fast forward to 2014, see below:
UPDATED 12/21/14: Eeeek, Aster is now almost 15 months old, how did THAT happen. And the winter of 2013-14 was brutal here in Ohio the jury is still out how this one will be. It has started off rather cold with above average snow, but the meat of the winter is yet to come.
Why was I saying "Eeeek?", just an odd word choice looking back. I'm always more critical of my writing when I go back and re-read it. Really, the winter of 2013-2014 was brutal in Ohio. It must not have been THAT brutal because I scarcely remember the weather that winter, maybe I was just in too much of a sleep fog. But the winter of 2014-15? I don't remember much of that either. And by the time I wrote the above dispatch Aster was 15-months old....crazy....now to the next dispatch:
UPDATED: 12/16/15: Wow, I look at the above update and it is crazy....Aster is now almost 27 months old...how did THAT happen. The train of time does not stop at any station, does it? Unlike the past two winters, this one is at least beginning as a pussy cat. We've had a nary a flake so far....Okay until next year!:)
Okay, I like the "train of time does not stop at any station", that's really good! Winter being a "pussy cat", that's really bad. Very uncreative wording.
TODAY, 12/10/2020: So how can I update this. Aster's is now measure not in months,but years, she is 7. And since that last update was written, Beatrice arrived in 2016. So I have a 4 and a 7 year-old. I won't say "eeek", but I will say that the train of time has not stopped at my station. We live in a different house and, yeah, these peppermint brownie posts seem so long ago. What will I write when I update this next?
Okay, this is a basic Amish brown recipe that has been decked out for Christmas with peppermint. Really good stuff and a holiday tradition in our home.
Peppermint, by the way, is a favorite flavoring among Amish cooks, so this recipe honors that tradition.
🎅Amish Peppermint Brownies
1- 1 /2 cups flour
2 cups sugar
1 /2 cup cocoa powder
1 /2 teaspoon salt
1 cup vegetable oil
4 eggs
2 teaspoons vanilla
1 /2 cup chopped walnuts (optional)
PEPPERMINT FROSTING
2 cups powdered sugar
½ cup butter
2 tablespoons milk
¾ teaspoon peppermint extract
🎅 Peppermint Brownie Instructions
- Preheat oven to 350 degrees.
- Grease a 9 by 13-inch pan.
- In a large mixing bowl, combine flour, sugar, cocoa powder, salt, vegetable oil, eggs, vanilla and optional nuts.
- Stir vigorously for about 3 minutes until the batter is well blended and creamy.
- Pour into prepared pan.
- Bake for 30 to 35 minutes or until a knife inserted into the center comes out clean.

Amish Peppermint Brownies
Ingredients
- 1 ½ cups flour
- 2 cups sugar
- ½ cup cocoa
- ½ teaspoon salt
- 1 cup vegetable oil
- 2 teaspoons vanilla
- 4 eggs
Peppermint Frosting
- 2 cups powdered sugar
- ½ cup butter
- 2 tablespoons milk
- ¾ teaspoon peppermint extract

Dear Kevin, it was fun to hear about Aster! I just had the privilege of spending 10 days enjoying my new, very 1st grandchild (a baby girl) in CT. I was in my glory and of course, she is beautiful and everything so good! I thank God for the privilege of being her Gramma Neenie!!
