Tis the season of asparagus.
Nothing beats the taste of fresh asparagus. Rachel just puts asparagus on a baking sheet, drizzles them with olive oil, salt and peppers them and then bakes at 350 for about 10 to 15 minutes. YUMMMM...so simple, but so good. But there are other ways to use asparagus. This neat recipe comes from the Amish Cook archives and I may just have to try this one. But if you want to beat me to it, here it is:
AMISH ASPARAGUS LOAF
1 quart cooked asparagus
1 quart bread cubes
4 eggs
2 cups milk
2 tablespoons melted butter
1 teaspoon salt
Combine all ingredients. Turn into a greased loaf pan or casserole dish.
Bake at 350 degrees for 45 to 60 minutes.
Makes 8 to 10 servings

sorry but how much is a quart of asparagus???????? It is sold by the pound in my stores.

I usually "eyeball" recipes...picture a quart of milk and go from there. Probably a good sized bunch or bunch and a half. Or if using canned asparagus, maybe 2 or 3 cans. Same for the quart of bread cubes...A quart is 4 cups.
Sounds like a great recipe...I've got to try it!
