For me, making a pie usually consisted of going to the grocery store, buying a pre-made crust and then making the filling recipe. A homemade crust was just too much time and trouble and, besides, who can resist a store-bought graham cracker crust? Not I:) Â But then The Amish Cook shared her "pat a pan" pie crust recipe and pie-making just got a ton easier. Â No rolling, no using 10 different bowls, just pour the ingredients into the pie pan, mix and pat and you've got yourself an easy pie crust and it's tasty to boot! Â These are three awesome looking pie crusts sitting on the counter at an Amish home.. Â And here is the recipe so you can try these easy ones yourself:
Ingredients:
1 ½ cups of flour
1 ½ teaspoons sugar
½ teaspoon salt
½ cup vegetable oil
3 Tablespoons cold milk
Directions:
Place the flour, sugar, and salt in the pie pan and mix with fingertips until evenly blended. In a measuring cup combine the oil and milk and beat until creamy. Pour all at once over the flour mixture. Mix with a fork until the flour mixture is completely moistened. Pat the dough with your fingers, first at the sides of the plate and then across the bottom. Flute the edges. Shell is now ready to be filled. If you are preparing a shell to fill later or your recipe requires a prebaked crust, preheat oven to 425. Prick the surface of the pastry with a fork and bake 15 minutes. Check often and prick more if needed.

I've always had a fear of pie crusts, but this looks like one I could handle. If I remember right, this is in the Amish Cook's Baking Book? I do love those cookbooks!! It also seems like it would be a good recipe to use with children.
