This is the time when gardens really begin to ramp up. Across Amish country plump red tomatoes, fragrant herbs, tasty cucumbers, and succulent zucchinis are being harvested. This is a super easy salad to make, you just need a little Mozzarella and you're good to go. The ingredient amounts below are approximates, you can experiment and adjust according to taste. This is a tasty salad!
EASY MOZZARELLA SALAD
20 small balls of Mozzarella cheese (often labeled bocconcini)
Approx 20 small cherry tomatoes
approx 20 fresh basil leaves
approx 1/ 2 cup balsamic vinegar
approx ¼ cup extra virgin olive oil
salt and pepper to taste
Mix all together in a bowl until the ingredients are evenly distributed and the basil leaves are coated.
