One Kettle Soup Revisited

I posted about this recipe this past winter, but now I have a photograph:)  Lovina made a batch last time I visited her. Look how hearty it is, swimming with noodles, homegrown potatoes, and thick chunks of home-canned beef.  To sort of repeat what I said about this dish in the winter: Few other recipes – with the exception perhaps of oatmeal pie – do I associate more with my early memories of Elizabeth Coblentz, the original Amish Cook. Elizabeth’s would put on a pot of homemade “one kettle soup” frequently, whether it was summer or winter it made for a quick, easy, hearty meal.  Here is Elizabeth’s recipe:


1 quart of beef

4 potatoes or more, diced

1 package of noodles

salt and pepper to taste

1 onion

Cook potatoes, onions, and noodles together until done. Add beef or beef soup base to your taste.

      I think that “beef soup base” is beef broth. I think I will wait for cooler weather to make this soup. It does look tasty but with the warm weather I am living on salads and sandwiches.
