This recipe for easy Amish Parmesan Potatoes is an old recipe. In fact, it first ran on Amish365.com in January of 2012 and it was a recipe I had in my Amish Cook archives, so the recipe has a long history on this site.
The recipe calls for parmesan cheese a typically Italian condiment that has found favor among the Amish. It’s an easy cheese to work with, especially when paired with something else easy to work with: potatoes.
Potatoes and the Amish are pretty synonymous. Potatoes grow well in almost any kind of soil and it is not uncommon for an Amish family to plant up to 200 pounds of spuds for their family.
Amish communities in Maine have particularly celebrated the potato, but potatoes are pretty much grown in most Amish settlements.
I visited the Amish settlement of Smyrna, Maine during potato harvest time, so I was able to watch potatoes being picked, hard-sorted, and ready to harvest. As an aside, this is an interesting video I found on YouTube of Amish potato planting and harvesting being done on a farm in Libby, Montana. The man sort of looks Amish. Sort of. The settlement sometimes still refers to itself as Amish, but the Libby, Montana group has adopted more progressive dress and technology, so they have lost a lot of their original Amish traditions. The Amish grower gives some interest information and tips about potato growing.
Jessica tried this recipe for us and said that this potato recipe is so easy and good, and that these Parmesan potatoes are really great dipped in sour cream or ketchup. Jessica also said to make extra coating and then do the same thing with onions, dip and bake them. Sounds amazing to me!
Be sure to enjoy with sour cream!
This is a great recipe as a hearty side dish or even a main meal. This recipe comes from the Amish Cook recipe archives.
