It's fun to try something different for the Thanksgiving table. Pumpkin pie is the old standby for dessert, although I love sweet potato pie as an alternative. I was at a farmer's market type place recently and saw cushaw pie being sold, that looked tempting. After stuffing oneself with stuffing, dressing, potatoes, casserole, turkey, and everything else on the Thanksgiving table, then it's time to gorge on slices of fresh pie. This is where "pumpkin pie squares" is kind of a nice twist on the traditional pie, you can sort of enjoyable bite-sized bits of the dessert without having to cram a whole slice of pie onto your plate. AMISH PUMPKIN PIE SQUARES
- ½ cup butter, softened
- ½ cup brown sugar
- 1 cup all-purpose flour
- ½ cup rolled oats
- 2 eggs
- ¾ cup white sugar
- 1 (15-ounce) can pumpkin
- 1 (12-fluid ounce) can evaporated milk
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon ground nutmeg
- DIRECTIONS: Preheat the oven to 350 degrees. For the crust: In a medium bowl, cream together butter and brown sugar then mix in flour. Now add the oats to make an oatmeal crumble crust to press inside a 9×13 inch baking dish. To set the crust for the pie filling bake it in the oven for 15 minutes. While the crust is baking, make the pie filling to add to the crust. In a large bowl, beat eggs and mix in white sugar. Beat in pumpkin and evaporated milk. Mix in salt, cinnamon, ginger and cloves. Pour over baked crust. Return to the oven and bake in heated oven 20 minutes, until set. Let cool before cutting into squares

Instead of using white sugar, try brown sugar. That was my mother's secret to her yummy pumpkin pie.

Those squares do look delicious -mmmmm! could have some w/ a cup of tea
right now.
Cushaw pie sounds wonderful too. My father-in-law used to raise them and
we used the flesh in a Pumpkin Cake recipe that we all bake in our family.
Actually they taste very much like the pumpkins that are popular for pies.
They are also very good prepared like acorn squash or butternut squash
or substituted in a recipe for either of them.
