I have so many Amish recipes in my office and I want to start filing them and cataloging them and getting them into a better system. They won't organize themselves and the longer they just sit in a bin that I have to rifle through the more the collection just gets even more disorganized, but I did want to share a recipe with you today.
This recipe is called Quaker Cookies and I'm not sure why. Â My guess might logically gravitate towards the oatmeal in them and not the religion, but I can't be sure. Â Quaker cooking and Amish cooking do have similar culinary lineages and styles. Â I did Google "Quaker Cookies" and didn't really come up with anything meaningful, so the origins of this recipe may be lost to time.
Anyway, I've had this cookie before and it is a delicious, oatmeal-y type cookie. Â These types of cookies are popular among the Amish. Â I mean, if I am going to go through the trouble of making a cookie I am going to make sure it is infused with chocolate or slathering with frosting, but Quaker Cookies fit a different category that are immensely popular among the Amish, and it might best be called a "breakfast cookie." Â It's not sugar-spiking sweet, yet not savory, it's moderately sweet and does make a perfect complement to a cup of coffee in the morning. Â Enjoy!
- 1 cup margarine
- 2 cups brown sugar
- 2 eggs
- 2 teaspoons vanilla
- 1 1 /2 teaspoons baking soda
- 1 teaspoon salt
- 2 1 /4 cups flour
- 3 cups rolled oats
- Cream margarine and sugar.
- Add eggs and vanilla.
- Mix well and add flour, salt, and soda.
- Add rolled oats last.
- Chill dough, then make into balls the size of a walnut
- Roll in sugar.
- Bake 10-15 minutes at 350.
- Also, coconut and chocolate chips can be added.
