SIX FAMOUS AMISH DESSERTS: Desserts are changing among Amish cooks and not always for the better. Â It just depends on where you go and who you visit. Â In many Amish homes desserts are still a scratch-made staple, in other homes boxed cake mixes and canned frosting are common. Â I always prefer the scratch-made desserts although a 3-ingredient cake recipe in this collection is clever. There is a level of "Amish ingenuity" that goes into many dessert recipes and in the case of the 3-ingredient cake, I give points for creativity!:) Â Make sure on the 3 Ingredient Yum Cake that you use flavors that "pair" well together in the pie fillings and cake mix, like pineapple pie filling and chocolate cake might not be such a good fit...bleh...
The oatmeal molasses pie sounds like a delicious variation on the typical oatmeal pie. Â A typical oatmeal pie is sticky enough, I can't imagine it with molasses!:)
The recipe below for "Amish Cake" is a popular one in Amish homes, although historically pineapple has not been an ingredient Amish cooks have had ample access to, so it must be a more recent entry into Amish kitchens.

Hi Kevin, The Amish cake that uses the pineapple is almost identical to a recipe I’ve made for over 20 years, except it uses a can of fruit cocktail in place of the pineapple. No surprise, it’s called Fruit Cocktail Cake and it’s delicious! I might try it with the pineapple, though.
Kevin
