Rachel and I love to eat a dish of zucchini, onions, and squash cooked on the stovetop, in a cast iron skillet, til tender. Yum, perfect summer meal! We ate this last night and the onion was from our garden. The squash came from grocery giant Kroger.  What's the big deal about that?  Well, before it was at Kroger, the squash came from an Amish grower.  Notice the horse and buggy on the label?  But notice how it isn't a splashy label, it doesn't even say "Amish."  That is exactly what the growers want, they don't want to push the Amish angle too much.  But this label - for those in the know, which now include all of you:) - does denote that the product comes from Green Field Farms. Green Field Farms was formed in 2003 as a 100-percent Amish-owned not-for-profit farmers' cooperative dedicated to producing organic products using traditional farming methods. They do have a website maintained for them, you can visit it here. I'll be visiting with the owners of Green Field Farms more in the future and sharing their wonderful ways with you.  Meanwhile, doesn't this zucchini-squash dish look yummy?  Here is how Rachel fixes it:
2 tablespoons olive oil
5 - 6 zucchini or summer squash sliced thin
1 medium onion, sliced thin
salt and pepper to taste
grated Parmesan cheese
Cook in skillet over medium heat until tender. Season with salt and pepper. Â Remove from heat, spoon onto a plate and sprinkle with Parmesan cheese.

Squash is a staple in the summertime at our house. Our favorite way to have it is as the entree, an all in one meal. I start the skillet with a few tablespoons olive oil and a cubed chicken breast then I add some diced onions, potatoes, zucchini and yellow squash and slow to cook for a few minutes then I sprinkle with Italian dressing and cook until done!

Hi Kevin. Your squash meal looks wonderful. I have made a similar mix before but I also love sauteed fresh mushrooms as part of that mix. Have also used some sharp cheddar or other cheese at the end. It is so yummy.

Kevin, the recipe sounds great. Squash is a veggie you want organic, too, because we eat the skin. We like to fix our squash by slicing it, tossing it with olive oil, garlic, salt and pepper and roasting in the oven. Yummy!

This is my recipe, also. Sometimes I fry a pound or so of hamburger first, then add the squash and 1/2 can of cream of chicken soup..it's almost a one dish meal.

recently tried to get some difference in the squash meals and halved them spooned out the seedy centers and sprinkled some green salsa on them. hsb was very appreciative and gives it a two thumbs up.
we usually prepare it Rachels way too.
ps i know you have expressed Rachels more private nature but it is great to hear from her even vicariously via a squash dish photo.
