CRANBERRY SALAD
1 /2 pound cranberries (ground)
1 cup crushed pineapple
2 small boxes cherry jello, add water as usual
2 cups sugar
6 apples, peeled and diced or shredded
1 /2 cup nut meats
1 /2 cup celery
Dissolve jello and add sugar. Cool, then add remaining ingredients. This will not set as firm as usual, but it is not runny.
POTATOES SUPREME
6 large potatoes
1 stick butter
2 cups sharp Cheddar cheese, shredded
2 /3 cup green onions, chopped
1 cup milk
1 16 ounce container sour cream
salt and pepper to taste
Boil potatoes in their jackets until done and chill overnight. The next day peel and grate potatoes with a hand grater and set aside. Melt margarine in large non-stick pan and then add cheese until melted. Add rest of the ingredients except potatoes and heat until blended. Then combine potatoes with mixture and pour into a 9 X 13 glass baking dish. Bake uncovered at 325 for 1 hour. Delicious!
ICE BOX ROLLS
1 package yeast
2 /3 cup shortening
1 cup mashed potatoes
1 teaspoon salt
1 /2 cup lukewarm water
2 /3 cup sugar
1 cup scalded milk
6 cups all-purpose flour
2 eggs
Soften yeast in lukewarm water. Scald milk, add shortening, sugar, salt and mashed potatoes to milk (after its' been scalded). Cool to lukewarm. Now add to yeast, mix thoroughly. Add well-beaten eggs. Stir in enough flour to make a soft dough. Turn on a board, lightly floured, and knead well. Put into large bowl to allow rising. Cover and set in refrigerator overnight. When wanted, cut off as much as need. Roll out into the shape desired. Let rise one hour. Bake at 350, 14 to 20 minutes until slightly browned.
APPLE PUDDING
1 cup sugar
1 /4 cup butter, melted
1 egg, beaten
2 cups apples (shredded)
1 /2 teaspoons nutmeg
1 cup flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon cloves
Combine sugar with butter and beaten egg and beat well. Add apples. Sift flour with soda and spices and stir in. Bake in 8-inch square pan at 350 for 45 minutes.
HOW TO MARINATE A TURKEY
2 gallons water
1 cups Tender Quick
1 /2 cup liquid smoke
Mix all together in a 5 gallon bucket. This is for a 15-20 pound turkey. Stick turkey in the bucket. Marinate 3 to 5 days in the fridge. Bake at 200 degrees in the oven for 8 hours overnight.

Hi Kevin, Wow, wish we had Thanksgiving in Australia, food, food and more food. Would love to try these recipes but would you be so kind to explain to this Aussie what 'nut meats' are?

Zelka - Nut meats really is just another term for "nuts":), not sure why that term is used but "nut meats" means nuts with their shells removed...that's all...so English walnut pieces and nuts like that are sometimes referred to as "nut meats." Does Australia having anything comparable to Thanksgiving? Like a "Founder's Day" or some sort of big feast day? - Kevin

Thank you Kevin, that makes sense. We do have Australia Day which is celebrated on the 26th January and that used to be called 'Foundation Day' and it is the celebration of the arrival of the First Fleet from England in 1788 to Australia. That is a feast but a BBQ feast, Australians are big on BBQs and being the middle of summer one does not want to be cooking indoors.
