CHEESY SAUSAGE AND RICE BAKE
1 pound sausage
2 cups grated cheese
1 can cream of mushroom soup
1 /4 teaspoon onion powder
3 cups hot cooked rice
3 eggs, beaten
1 4 ounce can of mushroom pieces
1 /2 cup milk
Cook the sausage, crumble, and drain. Combine cooked rice and 1 1 /2 cups of the cheese. Spread into a buttered 2 quart casserole dish. Sprinkle sausage over rice. Combine rest of the ingredients except for a half cup of cheese. Pour over the sausage. Sprinkle with 1 /2 cup cheese over on top of everything. Bake at 350 for 40 – 45 minutes., Cover loosely with foil while baking.

I am curious, as all Amish communities vary, do the Eichers actually have their own telephone at home to use in emergencies such as this one?

This recipe sounds good!! I also am wondering about the phone use. I thought the Amish had a community phone. Is there any way to get a recipe for pon hoss?

I'm curious about the pon hoss too. Is it the same, or similar, as scrapple? I'd love to know more ways to use it than just frying it. I also use it as a "crust" for quiche or egg & cheese pie.

So glad that everyone is safe. I've gotten sick once from carbon monoxide and it is not pleasant and is very scary that such an unseen danger can lurk in our homes.
For those that have questions about Amish and phones... the rules pertaining to phones can be very different depending on the different church districts. Some can have phones in shanties outside their homes, some the shanty has to be a good distance from the home, some may have phones in their work shops and some may have no phone at all.

I tried the above recipe for supper last eve. and it was very good. I used hamburger since that was what I had on hand and worked out well. Even better, there will be leftovers for another meal.
