Check out these favorites from Amish kitchens in the heart of America's oldest Amish community: Lancaster County, Pennsylvania. Well, it is the largest. The oldest could be debatable since the Amish first planted roots in Berks County, but we'll go with it. During the winter, meals are heartier and beefier and here are five that fit the bill. Enjoy!
Quality is key, most Amish will use home-butchered beef like this, you should try to get the freshest beef possible too.
CHUCK WAGON SALISBURY STEAK
2 cups cornflakes
1 egg
1 /2 cup bottled barbecue sauce
1 teaspoon salt
1 /8 teaspoon pepper
1 pound ground beef
Crush corn flakes to 1 cup, add eggs, and barbecue sauce. Mix only until combined. Shape into 4 oval patties about 3 /4 inch thick. Place in shallow baking pan and brush with remaining sauce. Bake at 375 for 30 minutes.
GOLDEN MEATBALL CASSEROLE
1 pound ground beef
1 /2 cup fresh bread crumbs
1 egg
1 teaspoon salt
all purpose oil
2 cups water
1 cup uncooked rice
2 large carrots cut into quarters
1 /2 cup green peppers, chopped
1 /4 cup onion, chopped
½ pound Velveeta, cubed
Combine meat, bread crumbs, egg, and salt. Mix lightly. Shape into 18 meatballs. Brown in small amount of oil on all sides in large skillet. Drain, add water, rice carrots, green pepper, and onion. Cover and simmer 25 minutes. Add cheese. Heat until cheese melts.
HOMEMADE SLOPPY JOE
2 pound ground beef
4 tablespoons brown sugar
2 small onions, chopped
1 sliced green peppers, chopped
2 teaspoons dry mustard
2 teaspoons salt
1 1 / cups catsup
2 tablespoons worcestershire suace
1 cup water
Mix all ingredients in a casserole. Bake at 225 for 3 hours or 250 for 2 hours. Serve on toasted rolls.
