I did a post the other day of chicken, pork, beef, and fish recipes just to see which one would end up on top and the winner, but not by much, was chicken. Pork and beef were separated by a single "view" and fish was last, but not by a ton. So, I guess the verdict is that you all like all kinds of meat recipes but you tilt towards chicken, so in celebration of that finding, here are some chicken recipes from my archives. The first one I kind of laugh at, the King Ranch in far south Texas is legendary and has operated for over a century by the same family. The ranch cooking has become legendary, but how did the recipe end up as an Amish favorite? This recipe for "King Ranch Chicken" comes from Lila Yoder in Montezuma, Georgia.
- 4 cups cooked chicken
- 1 cup chicken broth
- 12 soft corn tortillas
- 1 large onion, chopped
- 1 bell pepper, diced
- 3 tablespoons butter
- 1 can cream of mushroom soup
- 1 can cream of chicken soup
- 10 ounces of stewed, drained tomatoes
- 2 cups grated cheddar cheese
- Saute onion and bell pepper in butter until onion becomes transparent.
- Divide cooked chicken, stewed tomatoes, onion, and bell pepper over 12 tortillas.
- Roll up and place side by side in greased 9 X 13 inch baking dish.
- Combine soups and broth and pour over tortillas.
- Bake at 350 for 45 minutes or until bubbly hot.
- At 30 minutes sprinkle cheese on top.
This is a delicious sounding recipe from a Mrs. Byler near Loudonville, Ohio.
- 2 cups flour
- 1 /2 teaspoon soda
- 1 /2 teaspoon salt
- 5 tablespoons shortening
- 4 teaspoons baking powder
- 1 cup sour milk
- 1 quart cooked or canned chicken
- Roll out dough 1 /2 inch to 3 /4 inch thick.
- Spread 1 quart cooked or canned chicken (cut up) on top of the dough.
- Roll up as you would for cinnamon rolls and cut into slices.
- Place in greased cake pan and bake at 350 - 400 for about 25 minutes or until lightly browned
And this is a recipe for homemade chicken supreme from Anna Troyer.
- 2 cups cooked chicken
- 2 cups uncooked macaroni
- 2 cans cream of chicken soup
- 2 cups milk
- 1 /2 cup chopped onion
- 1 /2 teaspoon salt
- 1 /2 teaspoon pepper
- 3 tablespoons butter
- 1 cup grated cheese
- Combine all ingredients, put into greased casserole.
- Refrigerate or chill overnight.
- Bake at 350 for 1 hour.
And Clara Hoschtetler's homemade chicken patties:
CLARA HOSCHTETLER'S HOMEMADE CHICKEN PATTIES
3 cups chopped, cooked chicken
1 /2 cup celery
1 /2 cup onion
3 eggs, beaten
1 teaspoon poultry seasoning
1 cup cheese, grated
Mix all together and form patties. Roll in buttered crumbs of 1 /2 cup butter and 1 cup crushed cornflakes.
Lay on cookie sheet and bake at 350 until browned.
