Sour cream is such a flavor enhancer. And most Amish cooks have a ready supply of the stuff, actually homemade versions which taste even better than the Daisy brand you buy in stores. And they don't don't just pitch it, they use it to baked goods to infuse flavor and add bulk and even use it in suppers to help add a flavor kick.
