    Fresh sausage is a staple on Amish farms.  Most Amish butcher pork during the winter and freshly ground sausage is a great substitute in most recipes for hamburger.  Amish cooks will use sausage in chilis, meat loaves, and other recipes that call for hamburger just to add a bit of a flavor zip that sometimes bland beef doesn't deliver.
