    5 New Amish-Mennonite Winter Recipes: Mennonite Schoolhouse Casserole, Penny Casserole, Potato Chowder, and More!

    Winter is a time when the casseroles come out, the thick soups and stews, and the comfort food in general.

    An Amish farmhouse in winter...

    Let's start out with this Mennonite schoolhouse chicken casserole. In most Amish and Mennonite schools, children bring their lunches from home. You'll find packed sandwiches, fruit, soups, etc. On occasion moms will bring in hot lunches to ladle out and share with the class and this is a superb recipe that is served in some Mennonite schools in Pennsylvania. It's a recipe I've run into several times. There is even a Mennonite high school where this is on the menu from time to time.

    The casserole is delicious, it is a bit "soupier" than some, but very full of flavor and there's plenty to go around. In other words, it is easy to feed a large group of hungry students with this recipe.

    This recipe has a lot of canned soups, etc. Obviously you could do this from scratch, but that'd be a lot of work, so this is a "cheater's casserole" with canned soups.

    This is full of chicken and mushrooms and delicious.

    This version used a "wheel-shaped" pasta, but it is more common to use spaghetti. Still, you can use any kind of pasta in this.

    🍗Chicken Casserole Ingredients

    • 1 8 oz. package of spaghetti, cooked to package specifications
    • 3-4 cups of chicken, cooked and diced
    • 1 can of Cream of Mushroom soup
    • 1 can of Cream of Chicken soup
    • 1 can of Chicken Broth
    • 1 tsp. pepper
    • 1 small onion, chopped
    • Half-pound (8 oz.) of grated Cheddar cheese

    📋Chicken Casserole Instructions

    1. Combine all ingredients except cheese.
    2. Pour into a greased 9×13″ pan or baking dish.
    3. Cover with cheese.
    4. Bake 30 min. at 350 degrees.

    The Amish have a lot of winter recipes. These recipes nourish the soul and provide warmth and comfort. You probably won't find a big tossed salad on many Amish supper tables this time of year. Menus trend towards thimisck chowders and pile-on casseroles.

    Ingredients
      

    • 1 8 ounce package spaghetti cooked to package specifications
