This is an interesting recipe that comes to me from an Amish woman in Indiana. Enjoy!
Black Bottom Cupcakes
1 - 8 oz. cream cheese
1 egg
⅓ c. sugar
1 c. chocolate chips
Beat first 3 ingredients well. Stir in chocolate chips.
2 ¼ c. flour
1 ½ c. sugar
6 tablespoons cocoa
1 ½ tsp. baking soda
1 ½ c. water
⅓ c. plus 3 tablespoons oil
1 ½ tablespoons vinegar
1 ½ teaspoons vanilla
Beat above ingredients until well mixed. Fill lined cupcake tins ⅓ full of chocolate batter. Top batter with heaping tablespoon of cream cheese mixture.
Bake at 350 degrees for 15 - 20 minutes.
