If you are looking for a way to liven up a roast, you can try this delicious Amish recipe. Beats a bland boring roast.

It comes to us a Canadian Amish family.  As I often write, most Amish families would use their own home-butchered beef for a dish like this. You can't beat that.  As you'd expect the brown sugar adds a fun flavor to this dish.  SIGH, if you are watching calories and sugar, well, maybe you should skip this recipe. But the brown sugar just sort of adds this sweet caramelization which balances out the savory of the beef.

And this recipe - true to Amish tradition - has very little in the way of spices. But you could well balance out the spice by adding garlic, tarragon, onion powder, or a hint of cayenne if you like heat. But this recipe all works well just the way it is.

The roast can be prepared in a roasting pan, a glass baking dish, or even a slow-cooker or Crockpot. So you have options.

With prices through the roof everywhere (I read about someone finding a $100 roast at a grocery store in Canada), most Amish are relatively insulated from the meat madness, because most - not all - butcher their own beef and have their own supply to raid. Times like now are when home-canning becomes crucial because they'll home-can their own meat and it'll keep for a long time.

I am sure you can, by the way, experiment with the sugar amounts.  I'd probably add more brown sugar, but that's a preference of taste.

Beef roast packed in brown sugar before it's rubbed in...

The brown sugar is just a great balance to the savory of the roast. Four tablespoons is what is called for, but if I had to do it again I might well make it a half a cup and pat it all around the roast. By the you want some good caramelization and I don't think more would have been a bad thing.

Add some carrots and or potatoes to the roast to round out your meal

My parents went a little overboard with the carrots probably, but you could add potatoes, mushrooms, green beans, any vegetable you can think of to balance out the protein with some super vegetables. Sprinkle some brown sugar on the veggies to caramelize them a bit.
