Amish Caramel Pie

AMISH CARAMEL PIE: This is one of these classic confections found in Amish kitchens.  I’d be willing to wager that most of you have these ingredients already in your pantry and that is what makes Amish cooking/baking so accessible for most.  Give this sweet treat a try!  If anyone does try it and can share a photograph with me to post, please do!:).  My issue about making this would be scrubbing the pan afterwards.  Ugh.  But this recipe comes to us from an Amish woman in Aylmer, Ontario. Enjoy!

Caramel Pie

3 cups brown sugar
3 cups water
2 tablespoons butter
1 cup flour
3 cups milk
6 egg yolks

Boil brown sugar, water and butter together for 2 or 3 minutes for a good strong caramel flavor. In a separate bowl, mix flour, milk, and egg yolks. Slowly stir the flour mixture into the still boiling syrup, stirring constantly until it comes to a re-boil. Allow to boil for 1 minute and then remove from the heat; cool 5 minutes and stir once. Pour into 2 baked pie shells. Allow pie to cool and top with whipped cream.
