Millie Otto is an Amish writer who lives in Illinois. This week she is serving up Millie's Amish Carrot Cake! Millie is about 40 years older than our Amish Cook columnist, Gloria Yoder. So she offers up a different generational perspective and comes from a a larger Amish settlement (Arthur, Illinois). So, again, different perspective.
Here is an excerpt from her column this week:
I must get done with this missive. I still want to cook some butternut squash so I can make pie tomorrow.
Daughter Rachel has workday planned for Thursday and I want to make an apple and pumpkin (squash) pie. Also pumpkin bars for break.
I also have coffee break with some cousins on Friday so I need to make something for that. I was strongly tempted to take a shortcut and get cinnamon rolls at Shady Crest. I already did one shortcut by buying ready-made pie crusts there.
I love Millie's practical, "oh well" attitude. Yep, even sometimes Amish cooks take short cuts and buy ready-made pie crusts. Although, I will say, with the Amish365.com popular pat-a-pan-pie crust you really don't need store-bought, the pat-a-pan is so fast to make you aren't saving time by using ready-made.

Millie's Amish Carrot Cake
🍰 Cake Ingredients
- 2 cups sugar
- ½ cup oil
- 3 eggs
- ½ cup yogurt
- 2 Tsp. vanilla
- 2 Tsps. cinnamon
- 2 Tsps. baking soda
- ½ Tsp. salt
- 2 cups four
- 1 cup crushed pineapple, drained
- 2 cups finely grated carrots
- 1 cup nuts
- 1 cup coconut
🧁 Icing Ingredients
- 8 oz. cream cheese, softened
- ½ cup butter, softened
- 1 Tsp. vanilla
- 2 ½ cups powdered sugar
📋 Baking Instructions
Cake
- Mix all ingredients together.
- Pour into a greased nine-inch by 13-inch pan.
- Bake at 350 degrees for 50-55 minutes.
- Frost when cool.
Frosting
- Mix until smooth.
- Frost cool cake.
- Enjoy!

Millie's Amish Carrot Cake
Ingredients
- 2 cups sugar
- ½ cup vegetable oil
- ½ cup plain yogurt
- 2 teaspoons vanilla
- 2 teaspoons cinnamon
- 2 teaspoons baking soda
- ½ teaspoon salt
- 2 cups flour
- 1 cup pineapple crushed and drained
- 1 cup walnuts chopped
- 2 cups finely grated or shredded carrots
- 1 cup coconut
Frosting
- 8 ounces cream cheese softened
- ½ cup butter softened
- 1 teaspoon vanilla
- 2 ½ cups powdered sugar
