    Amish Chicken Biscuit Stew

    Homemade Chicken Biscuit Stew

     I thought it'd be a good time to share a favorite recipe in Amish households.  This is a favorite because it blends two staples of most Amish cooks: home-butchered chicken and scratch-made biscuits (although you can use biscuits from a tube).

    My grandmother would use biscuits from a tube quite often. Her favorite brand was Hungry Jack. They were big buttermilk biscuits, kind of like the "Pillsbury Grande".  And big Hungry Jack biscuits would go well in the stew like this. Of course, you can make your own homemade biscuits. Nothing wrong with that. That would be even better.

    A chicken biscuit stew like this would be very popular on an Amish farm on a Sunday, or to take to a carry-in supper. You just can’t beat the combination of golden brown biscuits with this delicious chicken, potatoes, and carrots. It’s a winning combination.

    I do love Red Lobster's Cheddar Bay biscuits. Those are amazing, at least in terms of commercially made biscuits.  I’ve always been underwhelmed by KFC biscuits, they've always tended to be dry to me, at least the kind they stick in your box of chicken dinner.  As far as fast food goes, I always enjoyed Hardee’s biscuits.  Some of them would go well with this recipe!

    If you have whole milk, use that in this recipe, you'll get a richer, creamier taste.

    Peel and dice potatoes, although you could leave the peel on. If you want some spice to this, you could add a little cayenne pepper with the salt and pepper. Either way, you'll come out with this super stew!

    Homemade Chicken Biscuit Stew

    Refirgerate leftovers in a sealed container, but Amish Chicken Biscuit Stew is so good you won't have leftovers. If you do, though, it almost tastes better the next day after all the flavors have melded!

    🍲 Amish Chicken Biscuit Stew

    • 1 cup margarine or butter
    • ⅓ cup flour
    • 1 /2 teaspoon salt
    • Dash pepper
    • 3 /4 cup milk
    • 1 cup potatoes, peeled and diced
    • 1 cup carrots, diced
    • 1 cup peas
    • 1-⅓ cup chicken broth
    • 2 cups cooked chicken
    • 1 /3 cup onions
    • 1 tube refrigerated biscuits or make your own,

    📋 Instructions

    1.  Melt butter and add flour, salt, or pepper.
    2. Over low heat, add milk to form a white sauce, stirring until thick.
    3. In a separate saucepan, boil potatoes, carrots, and peas and drain.
    4. Add to white sauce.
    5. Add broth, chicken and onions.
    6. Put into a greased 9-by-13-inch pan and top with the biscuits. Bake at 375 for 20 to 25 minutes.
