    The Amish Cook: Butterscotch Zucchini Bars

    The Amish Cook: Butterscotch Zucchini Bars

    Ingredients
    • 3 eggs
    • 2 /3 cup oil
    • 2 cups sugar
    • 2 teaspoons vanilla
    • 1 teaspoon baking soda
    • 1 teaspoon salt
    • 1 teaspoon baking powder
    • 2 1 /2 cups flour
    • 2 cups zucchini (shredded)
    • topping:
    • 1 /2 cup brown sugar
    • 1 cup butterscotch chips
    Instructions
    1. Beat eggs, oil, vanilla, and sugar.
    2. Then add flour, soda, salt and baking powder.
    3. Then stir in zucchini.
    4. Pour into a greased 15 X 10 cookie sheet.
    5. Topping instructions:
    6. Mix together and spread on top of batter.
    7. Bake at 350 for 30 minutes or until toothpick comes out clean.

      I am so glad Susan is in another position at work. It is so trying to have allergies in the work place. It makes one a bit shy about going on to the next position and having to use new products and wonder what the reaction will be. She seems to be a good worker for being helpful to her mother but there is not paycheck with that one is there ?
      The team efforts this family puts into helping each other with cleaning or butchering and everything in between is so precious and makes one wonder how much has been lost in acquiring all the labor and time saving devices.
      too bad we will not be able to see photos of the cute foals.
