    The Amish Cook: Homemade Banana Muffins

    BANANA MUFFINS

    3 large bananas

    1 large egg

    1 teaspoon baking powder

    1 1 /2 cups flour

    3 /4 cup sugar

    1 teaspoon baking soda

    1 /2 teaspoon salt

    1 /3 cup melted butter or margarine

    Mash bananas, add sugar and slightly beaten egg. Add melted butter and stir. Add dry ingredients, mix well, and pour into greased muffin tins.  Bake at 375 for 20-25 minutes.

      I just recently received Susan and Verena's cookbook and it really is delightful. Some nice pictures of the old Coblentz home in the book and lots of recipes from the many family members. I laughed when I saw one submitted by little Kevin! What a wonderful book to have for their family and I am happy to receive one as well. Thank you for getting us the info to get one.

        Tanya - I am not 100 percent sure, because that information was not included with the recipe...but I think 2 dozen.....

          I made these today, and I got 12 regular size muffins out of the batter. They smell yummy! I can't wait until they cool so I can try one!
