    The Amish Cook: Maple Custard Pie

    MAPLE CUSTARD PIE
    2 ¼ cups brown sugar
    9 tablespoons flour
    9 egg yolks
    6 tablespoons maple syrup
    3 /4 teaspoon salt
    6 cups scalded milk
    Frosting:
    9 egg whites, beaten
    3 /4 teaspoon salt
    18 tablespoons powdered sugar
    1 teaspoon vanilla
    Mix flour and brown sugar and press into 3 unbaked pie crusts.  Beat egg yolks and add maple syrup, salt and milk, and carefully and pour this mixture over the sugar mixture.  Do not mix.  Bake at 425 degrees for 10 minutes. Lower to 325 and bake for 23-30 minutes. Top with frosting and brown.

      How timely! As I type,I am finishing off our first batch of maple syrup for this year. I don't think that the season will last long..it has started late because of the cold winter,and the buds are swelling. If we get a few warm days,they will be out and so ends the sap running. It sure is good,tho"!!! I like to make maple custard pie and maple walnut icecream. Of course,the family likes to eat those treats!

        Sounds fun, Barb, I'm always envious of your self-sufficiency, I imagine the homemade syrup tastes so much better than the store-bought stuff!

          Kevin,it is fun..but as Susan found out,it is alot of work!! It takes alot of wood and 40 gallons of sap to each gallon of syrup(approx.). So far this year there is no mud..so I guess the cold winter has at least that to it's credit! Do you use the same mailing address? I would gladly send you some to try! You can let me know.
