    Amish Cook: Pumpkin, Anyone?

    Editor's Note to Readers:  These are some favorite fall recipes from Lovina Eicher. Her column will return next week.  Her absence is my doing, I wasn't sure when our baby would be born so I figured rather than having to be dealing with a column in the middle of it all, we'd just go with recipes this week. - Kevin Williams

    Pumpkin Sheetcake

    2 c. sugar

    4 eggs

    1 c. vegetable oil

    2 c. flour

    1 c. chopped nuts

    2 c. fresh pumpkin or 1 can

    ½ t. salt

    1 t. baking soda

    2 t. baking powder

    2 t. cinnamon or pumpkin pie spice

    Preheat oven to 350 degrees. In a large bowl, mix all ingredients together and pour into a sheet cake pan. Bake at 350 degrees for 20 to 25 minutes. Let cake cool and then add frosting.

    Frosting Recipe:

    1 8-ounce package cream cheese

    2 sticks of softened butter

    ½ c. chopped nuts

    box of powder sugar

    Mix well and spread on cake after it is cool

    PUMPKIN PIE

    1 cup sugar

    1 tablespoons flour

    1 teaspoon cinnamon

    1 /2 teaspoon pumpkin pie spice

    1 teaspoon salt

    2 eggs, separated

    1 cup pumpkin

    1 cup milk

    Combine dry ingredients. Add egg olks, milk, and pumpkin. Fold in beaten egg whites. Bake at 400 for 35-45 minutes or until toothpick comes out clean. Makes 1 9-inch pie

        Dear Janette,
        I can only assume that you are a very unhappy person and are looking for attention. Next time use a filter and consider whether your momma or grandma would be proud of your words and attitude.
        Just like TV, change the channel. Google pictures of puppies and have a good day.

      Hi Kevin--I love hearing about your new baby. You and Rachel enjoy your baby they grow so fast. She will settle down soon and you will get some sleep. I had 5 close together and the sleeping does get better. Enjoy every minute and don't let rude people bother you.

      Recipes are always good..this is the Amish COOK website,after all!! I have been a long-timer on this site,and Kevin has always done a top notch job. Babies cannot be "predicted",and running this site should be second on the list for now. Great job,Kevin..and disregard the rudeness of some.

      Hi Kevin+Rachael, Congratulations with the arrival of little Aster! May the Lord bless and keep you all! As to the most rude remark from Janette- If she choses not to change her ways, she will be caught in her own trap+receive treatment in kind. That warning is found many times in the book of Proverbs. Forgive+ask God's intervention in her life, as well as your own. We can all use improvement with God's grace. There's no one on the face of this earth who doesn't need Him every minute of every day.       Yikes. Good grief. Holy smokes. Gosh dang it. I mean....seriously...Janette? I've always been under the belief that if you can't say something nice...find something nice to say anyway. Sheesh. Grow up already. Keep it coming when you can Kevin. Family is important...and getting a newborn to turn their hours around isn't an easy thing to do when you're already tired to start with. Good luck with it! Extra help is wonderful. Great time to bond. As to this recipe. A friend of mine makes this exact recipe and I find it just way too sweet for me. Some like it that way...just not me.

      and she even had to do it in caps. did anyone force her to follow this blog ?? did anyone tell her cannot hit the delete button ?? it is not like there is anything imperative or a death sentence if she does not read. Personally, I m hoping for a regular update on sweet Aster and how long this takes Kevin to get used to catnaps for his sleep time. We are privileged to be invited in for visits with your lovely little family. THANK YOU

      What a rude and nasty comment to make! She should apologize for making it. If you feel she really has a problem with you, remember this, ITS HER PROBLEM! Reading your column is the highlight of my day and as much as I love reading Lovina"s column I was hoping to get an update about your new baby. Hearing about the sleepless nights, backwards schedules and all that goes along with a newborn brought back lots of memories for me. Treasure every minute of it, even the rough stuff, because it flies by so, so fast.

      I think that Kevin & his family are as much a part of 'The Amish Cook' team as Lovina. It is lovely to hear about his beautiful daughter & I am so excited for both he & Rachel. Kevin, please don't worry about the rude commenter. Looking after your family is your priority & this is such an important time in your life that you will never have again (those first days with your first baby), so treasure each & every one of them.

      Kevin: I, for one, loved hearing about your family and your precious little girl. It gives your column such a personal touch and makes us feel like an extended family. Just keep up the good work and disregard any negative comments you receive. Remember, it takes a small person to say something so rude and that is not the following you need. It makes me wonder why she even subscribes to your column.

I guess when you're in the public spotlight, there is always that one who likes to spoil everyone's good time. The vast majority of us enjoy your columns and love to hear about your family!       Kevin... I am thrilled that your little pumpkin has made her entry into your family. Thank you for sharing even the smallest bit of her with us. Enjoy every precious moment with her. Time will pass way too quickly and she will grow right before your eyes. As for Janette - perhaps it is time she move on to somewhere that her unbelievable rudeness would be appreciated,
      because it is certainly not welcome here!

      Kevin, what size pan do you use for a sheet cake? I know this is larger than a regular 9 X 13" pan. Thanks. And enjoy that new little one!! Life will truly never be the same and the joy is overwhelming at this stage!
