    Amish Rhubarb Coffeecake

    RHUBARB COFFEECAKE

    1 1 /2 cups white sugar

    1 egg

    2 cups flour

    1 / 2 teaspoon salt

    1 teaspoon vanilla

    1 /2 cup shortening

    1 cup sour milk

    1 teaspoon soda

    2 cups diced rhubarb

    1 /4 cup sugar

    1 teaspoon cinnamon

    Cream 1 1 /2 cups sugar and shortening. Add 1 egg. Beat and alternate sour milk with flour, soda, and salt. Add vanilla and beat. Fold in rhubarb and pour into a greased and floured pan. Mix 1 /4 cup sugar and cinnamon and sprinkle on batter. Bake at 350 for 40 minutes.

      A friend from Michigan introduced me to The Amish Cook column several years ago when she sent me the newspaper clippings. However, I now receive it on the internet, and enjoy it so much. I had a recipe for a cucumber salad that was in a clipping, but have misplaced it. It was so good and I wondered if she would submit it again.
      Many thanks for you weekly column!
