    Amish Rhubarb Coffeecake

    RHUBARB COFFEECAKE

    Amish Rhubarb Coffeecake

    Ingredients
    • 1 1 /2 cups brown sugar
    • 1 /2 cup shortening
    • 1 egg
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1 /2 teaspoon salt
    • 1 cup sour cream
    • 1 1 /2 cups chopped rhubarb
    Instructions
    1. Topping: 1 /4 cup white sugar, 1 /2 cup brown sugar, 1 /2 cup chopped pecans, 1 tablespoon butter
    2. In a large mixing bowl, cream shortening, sugar, and egg. In another bowl, combine flour, soda, and salt. Add alternately with sour cream to the creamed mixture. Fold in rhubarb. Spread into a greased 9 X 13 inch baking pan. Combine all topping ingredients and sprinkle over batter. Bake at 350 for 45 – 50 minutes.

      I still have my laundry tubs and wringer, although this house has a machine. I still like to do my laundry by hand in the summer, outdoors, next to the clothesline.

      even after my father bought the auto washer and dryer because the wringer onw finally croaked, mom lamented that the new way was more time consuming even if it was less hands=on..
