This is just one of these easy Sunday afternoon chicken creations that the Amish are famous for. My parents enjoyed this last weekend, so I thought I'd share it with you. They are always up for trying one of the chicken recipes in my vast archives and they loved this one, you will also.
Chicken. What can we say about chicken that we haven’t already said? Really, nothing. Chicken is a favorite meat among the Amish simply because it’s so available. Most Amish farmsteads have some chickens running around the property, they use them for Meat and, frankly, for table scraps. Since most Amish don’t have a garbage disposal, chickens are the next best thing. And that really gives a better flavor when chickens have a diverse diet.
Chicken is cheap, feeds a lot of people, can be used in soups, stews, casseroles, stirfry‘s, and on and on. The Amish like chicken for the same reason non-Amish people like chicken: There’s just so much you can do with it. Even just made plain, dipped in some honey mustard and ranch dipping sauce you can have yourself a wonderful meal.
The end result in a wonderful cracker-coated crunch on the chicken. I think the cracker crumbs, just plain saltines, does a super job, but sure, you can mix it up a bit by using Ritz crackers or even Club crackers. But an Amish cook would be fine with just saltines and, wow, it does taste good that way!
You could also use a "flavored" cracker like the above. Either way, put whatever cracker crumb mixture you are going to use into a small bowl and mix with seasonings. Cracker-Coated Baked Chicken, true to most Amish cooking, has very little in the way of seasonings. But what it does have works perfectly. Still, if you are someone that wants more kick, this is the place where you can add perhaps some ingredients like garlic powder or pepper to the cracker crumbs.
Some Amish cooks, if they didn't have saltines on hand, would use stale bread crumbs and get much the same effect as crackers gives this recipe.

"Amish Chicken" is something that you seem slapped on labels of some store-bought chicken but the name really doesn't mean much. The name "Amish" implies that the chickens are free-range, grass fed, and often organic, but some large poultry operations will also advertise themselves as "Amish chicken." So, buyer beware, whatever you chicken you buy, try to source it well and responsibly.
Put the chicken on a foil-covered cookie sheet before baking, this will give you the most tender chicken. Use a meat thermometer if you have one to tell when done. You can use chicken thighs if you don't have chicken breasts.
Dipping the cracker-coated chicken in honey-mustard or ranch is delicious. Sprinkle some parmesan cheese on top for some extra flavor also. Serrved on a bed of rice or with a side dish like green beans, this Amish chicken creation is especially enjoyable. Any leftovers can be stored in an airtight container and popped into the fridge.

- 2 teaspoons Italian seasoning

Those are not boneless breasts pictured, that is bone-in, but this recipe would work fine with either!
