    Gloria's Home-Canned Green Beans

    Green beans are finding their way into canning jars.  At the Amish Cook's house glass jars are being filled with colorful fruits and vegetables to help get the family through the long Illinois winter.  Fresh summer garden items can then be enjoyed year round.  This recipe comes to us from an Amish cook in Holmes County, Ohio and I did have to do a little digging on this for one ingredient: boiled salad dressing.  This is not Miracle Whip, don't try to boil that.  This is a quick homemade concoction which you can find a simple recipe for here.  Once you do that, the rest is easy.

    Chilled Green Bean Casserole Salad

    Serves: serves 6
    Ingredients
    • • 3 cups green beans, cut cooked tender in 1-inch pieces
    • • 1 medium onion
    • • 2 tblsp. pickle relish or 1-large pickle
    • • 3 hard boiled eggs
    • • 2 tblsp. vinegar
    • • ⅔ cup boiled salad dressing
    • • 1½ tsp. salt
    Instructions
    1. Chop the onion fine, the boiled eggs, add the relish, or the pickle, chopped and the beans. Mix well together and add salt and salad dressing. Chill and serve. Green string beans, cut in 1-inch pieces may be used for this salad.

      Navy beans? Is there a mistake? It says green bean casserole... LOL!
