Kevin,
I received my first Amish 365 email in my inbox today. What a treat !!
I grew up in Lancaster County (southeast Pennsylvania Amish country) and my family was Mennonite. Summer picnics and family reunions were a wealth of farm country recipes. Our extended family (nearly 100 family members) has been meeting for a reunion in mid-July for well over a hundred years. Always on the main meat menu is the classic chicken done in large flat wire baskets done slowly over a bed of hot coals and marinaded with the best BBQ treatment ever - melted butter and cider vinegar.
Best summer chicken ever.
And there in your newsletter was the recipe. Followed by two other longtime family favorites - baked corn and seven layer salad.. And then as I read on there was my grandmothers butterscotch cake.
I’ve become an instant Amish 365 fan and look forward to future newsletters.
Grandma’s Tip for a crispy crumb topping on the baked corn is to crisp up the bread crumbs in the melted butter in a separate frying pan, bake the corn and then sprinkle the bread crumbs over the corn just before serving. This way they stay very crispy instead of getting soggy while baking on top of the moist corn in the oven.
Looking forward to many more tasty recipes from my farming childhood.

Thank you for the kind words, Don, and thanks for your Grandma's tip for a crispy crumb topping on the baked corn. I'll try that. I love Lancaster County, was last there in early 2020 and hope to make it back soon!
