Lemon pies are a staple in some Amish homes this time of year. The first warm days of spring have arrived and the cold days of winter have disappeared into the rear-view mirror. Perfect time for an Amish lemon pie! (So cool that lemons, just the natural, pure fruit, can help conquer a disease like scurvy, interesting article!)
Heavier January-day desserts also are made less often and Amish cooks begin to think of lighter, warmer weather sweets. A silky, delicious lemon pie is the perfect sweet treat as we approach Easter. This is a lemon meringue pie, but for those of you who don't care for meringue or just don't want to go through the trouble of making it, this pie would be superb as a stand-alone lemon without the meringue. But the meringue is a nice touch, so don't get intimidated by the meringue.
Lemons, by the way, are a fruit that manages to find its way into Amish communities despite being very non-native. Lemons ship relatively well and have long shelf lives, so it's not unusual to have crates of lemons being sold in Amish-owned groceries. Lemons are used for flavorings, lemonades, and, yes, pies!
I love the slightly toasted meringue!
So break out your lemons and give this a try!
🍋 Pie Ingredients
- 3 tablespoons of cornstarch
- 1 1 /4 cups sugar
- 1 /4 cup lemon juice
- 1 tablespoon of grated lemon rind
- 3 eggs, separated
- 1 ½ cups of boiling water
- 1 - 9" baked pie shell
📋 Lemon Pie Instructions
- Combine sugar, cornstarch, lemon juice, and lemon rind.
- Beat egg yolks; add to cornstarch mixture, gradually adding boiling water.
- Heat to boiling over direct heat and then boil gently in 4 minutes, stirring constantly. Pour into a pie shell.
- Beat egg whites until stiff, but not dry.
- Gradually beat in 6 tablespoons of sugar.
- Spread meringue over top of pie. Bake in a hot over for 4 - 5 minutes at 425 or until browned. Cool and serve.

A lot like mine, but I use 4 eggs, 1 1/2 cups sugar, 1/2 cups of lemon juice, grated rind of 1 lemon, 3 tbsp. butter, and 1 1'2 cups of water. Don't prepare it the same way, but this seems easier than the way I do it. Deanna Schroeder. This is a combination of Betty Crocker and my grandmother. This is similar to my recipe. If Rachel's pie turned out that well on her first attempt, I think she did great!

The pie looks great. I made two lemon meringue pies last week. I will have to try this one. I like any kind of lemon desert. Rachel
did a great job. Just a little tip. I buy lemons by the bag full at Costco, juice them and freeze them in a ice cube tray, that way I always have lemon at hand . I also freeze some of the lemon peels. They are very easy to grate when frozen. By the way one square of ice from the tray is about two tablespoons.

Good question, yes, the baking is really just to "toast" the meringue a bit, but if you are going to skip the meringue, chill the pie and enjoy!
