    Amish Mud Hen Bars.....

    When Gloria Yoder, aka  The Amish Cook, first shared her recipe for "Mud Hen Bars" was intrigued.  So the other day I made this bar recipe and tried to do it with Aster and Bea.  Aster's fine in the kitchen, Bea still wants to dump this and dump that and stir and then move on to the next things, so it's tough to do any baking project that has any depth when I have the girls.  So, had I been doing this myself, or if you are,  in a kid-free kitchen, these bars will be a lot prettier.  The photos do not do the actual bar justice, or maybe they do...I never asked Gloria why these are called "mud hen bars."   A mud hen doesn't sound pretty, maybe the bar is not supposed to be either.    There is, by the way, a minor league baseball team in Toledo called the Mud Hens.

    What makes this bar stand-out from others is the brown sugar-egg white mix that goes on top that sort of encases the bar in a delicious sugary crunch.  Man, these are good.  So as long as you aren't try to win a "beauty bar" contest, this is a bar worth making!

    Again, I know these bars won't win a beauty contest, but they ARE amazingly good!

    So, try making - and eating - them yourself!

    Amish Mud Hen Bars.....

    Cook Time 40 mins
    Total Time 40 mins
    Servings 36 bars

    Ingredients
      

    • 1 /2 cup shortening
    • 1 cup white sugar
    • 1 egg
    • 2 egg yolks
    • 1 1 /2 cups flour
    • 1 teaspoon baking powder
    • 1 /4 teaspoon salt
    • 1 cup nuts
    • 1 /2 cup chocolate chips
    • 1 cup mini-marshmallows
    • 1 cup brown sugar
    • 2 egg whites

    Instructions
     

    • Instructions
    • Mix first 7 ingredients and press into a 9 X 13” pan.
    • Sprinkle with nuts, chocolate chips and marshmallows.
    • Beat egg whites until stiff.
    • Fold in brown sugar.
    • Spread on top.
    • Bake for 30-40 minutes.
