    Amish Pizza Biscuit Casserole

    Pizza and the Amish.   The Amish have had a love-affair with pizza just like the rest of America.  The love affair is so strong, why stop at pizza?  Amish cooks have found ways to transport the wonderful taste of pizza to casseroles, breads, and, yes, there are even "pizza cookies" (although these just look like little pizzas, not taste)

    Amish Pizza Biscuit Casserole

    So, combine another American favorite - scratch-made biscuits - with pizza and you get a supper made in culinary heaven!  Now, like the Beef and Biscuit Casserole I posted recently, you can buy a tube of biscuits for this instead. Nothing wrong with that. This is a recipe sent to me by a creative Amish cook in Kentucky and, wow, is it a good recipe.  And the good thing is you can corners by just buying a tube of biscuits at the store, or you can make your own.  If you are stuck for a recipe for good, easy homemade biscuit, you can try these.

    Pizza biscuit casserole showcases simple Amish culinary creativity.  None of the ingredients that are in this casserole are particularly fancy, they’re functional. But they’re flavorful also. I mean, you’re really just combining a lot of the flavors of traditional pizza and “biscuiting “them… I just made up that word, but that’s really what you’re doing. To me, this casserole is the ultimate comfort food casserole.

    Now, I’m not a huge pepperoni fan. I have never been. I guess I’m a bad Italian in that sense. So I would probably skip the pepperoni. And if you wanted to replace it with some sort of ham, or bacon even, I think you could do that. and it would have great flavor. Or just omit the pepperoni.

    But, for those pizza purists who think pepperoni is a part of every pizza, yes, go ahead and use it.

    Brown ground beef

    You can use a pound of ground beef, but you could use any meat of your choice here, really: venison, sausage, ground turkey, or a blend, any of those would go fine here. Just season to your taste.

    Whatever biscuits you use, quarter them and put them in the casserole dish.

    Then cover the biscuits in pizza sauce. Most Amish cooks would not use store-bought pizza sauce, they'd have their own home-canned, but can use bought sauce for this recipe at home.

    Burger, Biscuit, and Sauce blend

    Whatever meat you are using, this is when you add it.


    This is when the casserole gets really colorful (above), after you've added the ground beef, top it with onions, pepper, mushrooms and any colorful veggies. I think corn could be a great addition here.

    If you are a pepperoni person, this is where you add it, at the end, and then bury the whole thing with cheese, Again, if you don't like pepperoni, I think bacon or a ham would be what to use here. Or nothing, just skip it.

    Bury the whole thing with your favorite cheese: mozzarella for pizza purists, but you could also go with cheddar, American , or some sort of blend.

    After about a half hour, the cheese should become golden and start to crisp on the top. That is when to take it out. Let it sit for a good 10-15 minutes, because it will be hot. But then it cuts very well.

    • 1 pound ground beef
    • 2 packages (12 oz. each) refrigerated buttermilk biscuits
    • 1 (15-ounce) can pizza sauce or homemade
    • 1 cup green pepper, chopped
    • ½ cup onion, chopped
    • 1 (4-ounce) can mushroom stems and pieces, drained
    • 1 package (3½ oz.) sliced pepperoni
    • 1 cup shredded mozzarella cheese
    • 1 cup shredded Cheddar cheese

    📋 Instructions

    1. Preheat oven to 350 degrees F.
    2. Cook beef until no longer pink; drain.
    3. Quarter biscuits; place in a greased shallow 3-quart baking dish.
    4. Top biscuits with pizza sauce.
    5. Sprinkle beef over sauce.
    6. Layer with green pepper, onion, mushrooms, pepperoni, and cheeses.
    7. Bake, uncovered, for 25–30 minutes or until cheese is melted.
    8. Let stand 5–10 minutes before serving.

    Ingredients
      

    •   1 pound ground beef
