Missing your favorite cream-filled yellow sponge cake? Well, Twinkies are making their way back into stores after disappearing earlier this year. In our local grocery stores TastyKakes began to take the place of Twinkies, but I think they are back. Twinkies aren't a favorite of mine, but I know some swear by them. And leave it to the Amish to find a homemade version. This recipe for "Homemade Twinkies" comes from the Amish settlement in Buchanan County, Iowa. Actually the Amish woman who's recipe it is calls them "Amish Twinkies" so I guess we will also. Yum! Word of warning: the instructions on this recipe are a bit sparse, so go slow. Sounds like you'll come up with a nice, sweet cakey-fillingy type confection but it probably won't look like an actual Twinkie, but it will be tasty!:)
- CAKE:
- 1 yellow cake mix
- 1 pkg. vanilla instant
- pudding
- 1 C. water
- 4 eggs
- ½ C. vegetable oil
- FILLING
- 3 egg whites, beaten
- 1 T. vanilla
- 3 T. flour
- 5 T. milk
- 1 ½ C. Crisco
- 3 C. powdered
- Mix and bake in two flat cookie sheets.
- Follow baking instructions on cake mix
- box, allowing for less time for the thinner
- batter.
- Mix together and beat until smooth.
- Spread filling between two cakes and cut into pieces the size you want.
