This is a pie that has captured the imagination of many people and has been adopted by some Amish as a family favorite on Christmas Day. You know, food traditions among the Amish are very individualized. If I had all the time and money in the world I'd love to do a "Christmas Day" recipe survey....I'd go door to door in Amish communities and ask people what is on their menu. My guess is that I'd have to knock on 200 doors before I found someone fixing this, but when I did it would be magic in a crust. I don't think it is a very common pie among the Amish, but it is a favorite among some.
There is even an Amish novel called "White Christmas Pie" by Wanda Brunstetter (whom I met in the buffet line once at the Farmstead Restaurant in Berlin, Ohio)

This is , by the way, a no-bake pie. So make, eat, and enjoy! Also, keep in mind there are egg whites in this recipe that are uncooked as part of the pie’s structure. If that concerns you, then don’t make the pie or leave them out. Almost all the recipes I could find online for similar recipes have the same ingredients.
Feel free to drizzle some chocolate syrup on top of the pie before serving. Ooh, or maybe some butterscotch or caramel syrup. Geez, the possibilities are endless. Use whole milk if you can, that gives it an even richer flavor.
You could use a graham cracker crust, a pre-made pie crust, or make your homemade crust using this pat-a-pan recipe. You could also make this as a "baking dish pie" where you press the crust into a 9 X 13 glass baking pan and then put the filling on top. Then you can cut the pie into squares, it'll help serve more people if you wanted to double the recipe.

🥧Amish White Christmas Pie
- ½ cup sugar
- ¼ cup flour
- 1 envelope unflavored gelatin
- ½ teaspoon salt.
- 1 ¾ cup milk
- 1 teaspoon pure vanilla
- ¾ teaspoon almond extract
- 1 cup coconut
- 3 egg whites,
- ¼ teaspoon cream of tartar
- ½ cup sugar
- ½ cup whipping cream
📋White Christmas Pie Instructions
- Mix in saucepan sugar, flour, unflavored gelatin and salt.
- Gradually stir in milk.
- Cook over medium heat till boiling.
- Boil and stir 1 minute.
- Remove from stove and let cool.
- Add vanilla and almond extract and coconut when cool.
- While the above mixture is cooling, beat 3 egg whites, cream of tartar and sugar till stiff peaks form. Set aside.
- Also during the cooling period, beat whipping cream till it is stiff. Set aside.
- Transfer the cooled mixture into a very large bowl. Carefully add the beaten egg whites and the whipped cream. Fold together.
- Spoon the folded, fluffy pudding base-egg white-whipped cream mixture into a baked pie crust. Sprinkle with coconut and chill for several hours and serve!
