    Ask The Editor: Two Amish Chicken Soup Recipes

    Joe Blust from Lawrenceburg, Indiana asks this week about chicken soup recipes.  That strikes me as more of a "winter recipe" request but, heck, I guess one can eat chicken soup any time of the year, right?  And these are two easy recipes from the archives that I thought I could share. Joe asked for a chicken noodle soup and or a chicken and recipe soup recipe?  How is one of each?

    This next recipe comes to us from the original Amish Cook columnist who included it back in one of her cookbooks from 1992:

    CHICKEN RICE SOUP

    CHICKEN RICE SOUP

    Serves: serves 6
    Ingredients
    • 1 whole chicken (cooked and bones removed)
    • 2 quarts of water
    • 1 onion, chopped
    • 3 /4 cup celery
    • 1 1 /2 teaspoons of salt
    • dash of pepper
    • 1 cup of cooked rice
    Instructions
    1. Mix in a saucepan and warm thoroughly over medium heat.

      Hey Kevin.. could you tell me why I can't print anything off of your website anymore? I try and it sounds like it is printing but comes out blank. I just printed a recipe off of Pillsbury's site a minute or two before and it came out perfect, so it is not my printer. This has been happening for the last few weeks. If it is something that I really want, then I have to write it out longhand. Is anyone else having this problem?

        Mari - I will check into this. First I have heard of it. I have been making a lot of behind-the-scenes changes in site operation, so maybe something got bumped...I'll check into it! - Kevin
