But, of course, in today's convenience-filled world one can enjoy apples year-round from their supermarket. Â My mother had some extra apples on hand last week and decided to dip into my recipe files for an Amish way to use these apples
Homemade apple walnut bars are a favorite Amish treat, especially in the fall when apple orchards are giving their yield!
Most of my apple recipes come from the New Order Amish settlement around Lyndonville, New York. Â This is lush apple country and the Amish tend many orchards in this area. Â You can experiment with what type of apple to use in this recipe. Most any will work, some better than others. A more tart apple will bring out the flavors in the bar the best, though.
These apple-walnut bars make a great breakfast alongside a cup of coffee and they pack great in a lunch pail for a treat for those who pack. Â Enjoy!
- ½ cup butter, softened
- 1 cup sugar
- 1 egg
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- 2 medium apples, peeled and chopped
- ¾ cup chopped walnuts
- In a large bowl, cream butter and sugar until light and fluffy.
- Beat in egg.
- Combine the flour, baking powder, baking soda and cinnamon; gradually add to the creamed mixture, just until combined.
- Stir in apple and walnuts.
- Pour into a greased 8-in. square baking dish. Bake at 350° for 35-40 minutes or until a toothpick inserted near the center comes out clean.
- Cool on a wire rack
- Yield: 16 servings.
