    Baked Apple Pudding

    Baked apple pudding.  Yum!  It is apple season now and I happened to have a couple of Honeycrisp apples on hand and the recipe seemed so easy I thought I would give it a try. The recipe is easy and delicious. It's really more cobblerish than pudding-ish.  The only thing I would have done different with the recipe below is doubled it.  2 cups of apples isn't much.  This dessert doesn't get much mileage for two people, let alone a family. So my only advice is to double the recipe and then enjoy!  Here are some photos of how mine turned out this morning.
    Apple Pudding

    2 cups peeled and chopped apples

    1 cup chopped walnuts

    1 cup flour

    1 cup sugar

    1 tsp. baking soda

    ½ tsp. salt

    1 egg, beaten

    3 Tbsp. butter, melted

    1 tsp. vanilla

    Combine apples and nuts in a bowl.  Sift flour, sugar baking soda and salt together and blend with 1st. mixture.  Combine egg, butter and vanilla and mix well.  Then add to the rest and stir till moistened.  Spoon into greased 8 X 8 inch pan.  Bake at 350 degrees until set, about 25 minutes. The pudding will be golden brown on top.

      Looks good. I was surprised that there is no cinnamon in this recipe. I might add some.
