We had just finished touring the Salemville Blue Cheese facility in rural Wisconsin when we walked into the small retail store that adjoins it. I asked the young Amish woman behind the counter if she had any favorite ways to enjoy blue cheese or if she had any recipes. She hesitated at first, not able to think of a recipe. But then she starts telling me how she makes a homemade blue cheese dip. So I excitedly got out my pen and paper and took down the young Amish woman's simple recipe.

- ¾ cup sour cream
- ¼ cup mayonnaise
- 1 ½ teaspoons fresh dill
- 2 ounces blue cheese, crumbled
- Whisk together the sour cream and mayonnaise in a small mixing bowl until creamy and well blended.
- Add the dill and blue cheese and stir to combine.
- The dressing is ready to serve, or may be chilled first.
