This is a hearty, delicious Amish Chicken Stuffing Casserole that can easily be a stand-alone meal because of all the veggies, meat, and broth in it.

And while there is nothing wrong with a box of stuffing mix in a pinch, this is easy and better! I always like to do my own homemade stuffing. This Amish Chicken Stuffing Casserole is such a good recipe and we love it because of its simplicity. But, first, let's talk more about the Amish and chicken
🍗 Amish and Chicken
The Amish raise plenty of poultry because chicken and turkey are cheap, and versatile. Chicken and turkey are cheap, easy meats to keep on hand. Doesn’t take a whole lot of space to have some chickens, and the table scraps make for inexpensive food and a delicious bird. It is this synergy that makes the Amish and chicken such a synonymous fit.
🙋 FAQ About the Amish and Chicken
While Col. Sanders might not be a household name among the Amish that he is among the English, the Amish are like anyone else....they do dine out as a treat or as a necessity when they travel. I've found Pizza Hut to be a favorite chain among the Amish, but a bucket o'chicken from KFC is seen as a treat!
The Col and KFC may have their secret spices, but the Amish not so much. Amish cooking tends towards the light on spices and seasonings, but you can always doctor up the recipe!
🥣 Preparing the Chicken Stuffing Casserole
All the ingredients for Amish Chicken Dressing Casserole are easy to prep and assemble and even easier to throw together!
Use a large saucepan for this over medium heat. Most Amish cooks would use a cast-iron skillet or pot. If you don't have chicken broth, cream of chicken soup would be a decent substitute. And if you don't have celery, you can get some of the same flavor with cream of celery soup. Cream of mushroom soup adds good flavor too but also sodium.
This is where you add chicken and other seasonings or spices that you might like but that the recipe doesn't call for, like rosemary thyme. Stir in some sour cream here if you want added richness.
We love to buy rotisserie chicken and use the meat from it. Or just throw in any leftover chicken you may have, this recipe is great for using leftovers. Otherwse just buy some precooked chicken breast and chop into bite-sized pieces.
Put in the oven in a glass baking dish. Use some cooking spray on it for easier clean-up. Some people like to sprinkle shredded cheese on top before sticking in the oven but I think it tastes fine without it.
This is a delicious meal. I think adding some corn or peas to the mix of veggies would be a great addition. Store leftovers in an airtight container in the fridge for up to a week or freezer for a month. Stick in the microwave to thaw, This is the best stuffing casserole recipe I have found!

I love this recipe! And I love the use of the word Oleo~just the word my Mom used on her recipe cards and a word she still uses to this day!

Yep, oleo is still a term used a lot by the Amish, but you rarely hear it anywhere else!
