    Cowboy Beefy Baked Beans

    Beans, especially cowboy beefy baked beans, are a great way to get extra fiber, protein, and vitamins.  I was never a fan of baked beans ,

    BUT, I do like them now.  I mean, I doubt I could just open up a can of Van de Kamps and be happy, but baked beans scooped up with a potato chip are pretty good. Baked beans with a little brown sugar. Baked beans with some extra protein, in the case of this recipe, hamburger, added.  You could probably add sausage, though, or veggie crumbs.  It's all good.  So, while I didn't like school cafeteria baked beans as a kid, I do like them now as an adult. So there.

    Brown the ground beef and you could use a mix of ground beef and shredded beef, you could just use shredded beef, there's flexibility here

    Reader Penny took this Amish365 Shaker Baked bean recipe and turned them into a "cowboy baked bean" dish. Cowboy beefy baked beans are popular in Amish settlements, so I appreciated her rendition of this recipe.

    🍲 Beefy Baked Beans Ingredients

    • Cook 1 lb. hamburger with one diced onion, drain and set aside.
    • 4 cups navy beans *
    • 2 1 /2 cups hot water
    • 1 onion
    • ½ cup molasses
    • 1 /2 cup butter
    • 1 teaspoon salt
    • 2 teaspoons dry mustard
    • 1 /2 cup tomato catsup

    📋 Instructions

    1. Instructions
    2. * Soak the beans overnight. *
    3. Drain and cook in fresh water until tender.
    4. Peel onion and place in bottom of well-buttered roasting pan.
    5. Drain beans and save liquid.
    6. Pour beans into buttered pan.
    7. Add molasses, butter, salt, dry mustard, and catsup to bean liquid that you saved and pour over beans.
    8. Lid on roasting pan for 3 hours.
    9. Add more water whenever necessary.
    10. Add hamburger & onions after 1 ½ hours. Still well.
    11. Remove cover for last half hour and brown well.

    SEMI-GUILT FREE FUDGE 

    I am always so intrigued with this recipe.  You may be thinking, what does this have to do with beans? Well, it is fudge made from beans.  The one time I made it, it was really, really good...it just didn't "set" like maybe it should have...it was, I think, too creamy, but I'd love to take another crack.

      Good morning Kevin. I can feel the frustration in your comments today, and thought that I would just try and give you an uplift. We are all going through the boring, crazy, life altering situation right now, and yes, perhaps for many more months to come. BUT, what is the alternative??? Imagine having to wear face masks for the rest of our lives...you have to accept the facts and still get on with your life the best we can. This situation is "a pain in the butt" but at least you perhaps still have a paycheck coming in. There are many of us out there who do not (including myself). Please, please, be thankful for what we do have right now...our families, our children, grandchildren, shelter, food and the love of our GOD. Yes, I am also a Catholic and try to stay as positive as possible, because I know there is a reason for Our Lord's workings, we just don't always understand them. Please be patient and enjoy what we have right now, even though it may not be to our liking. I'm sorry if this note makes you upset but you daily column is such an inspiration to me and others, and I don't want to lose you and your positive outlook on life. Pictures of your children make me remember my own grandchildren when they were little...LOL. Think positive Kevin and keep your chin up, things should get better soon hopefully.
