    Creamy and Cheesy Chicken

    This recipe comes to us from a very talented Mennonite cook and author in western Virginia. Her recipes are simple and tasty and tap deep into the culinary traditions of the Old Order Mennonite community near Dayton, Virginia.

    These types of recipes are common in Amish and Mennonite kitchen. One of the things I found interesting about this recipe is the inclusion of white wine as an ingredient. Amish and Mennonite culture does not consider alcohol taboo as many outsiders believe. Still, it's also not common to see the inclusion of alcohol of any sort in a recipe. Whether this recipe was something developed in an Amish or Mennonite kitchen or an "outside" recipe that made its way in the community, it would still be unusual to see white wine listed as ingredient. In fact, I have a gazillion Amish and Mennonite cookbooks and this is probably the only time I remember running across this. You can also use water instead of white wine, the wine will just give a bit more flavor.

    Again, alcohol is generally not taboo in Amish and Mennonite culture. In fact, some of the best wine I've ever tasted was homemade dandelion wine that an Amish homemaker made. Wow, it was so smooth. And package stores do brisk business near some Amish settlements (Berne, Indiana comes to mind).

    Okay, let's get to the Creamy and Cheesy Chicken

    Add some white wine

    Again, the white wine is optional, you can use water.

    The chicken topped with cheese and the soup-wine mixture.

    Topped with dry stuffing mix drizzled with butter and ready for the oven.

    🍗 Creamy and Cheesy Chicken Ingredients

    • 4 whole chicken breasts
    • 8 4 X 4 slices of Swiss cheese
    • 10 ¾ ounce can cream of chicken soup (undiluted)
    • ¼ cup white wine or water
    • 1 cup herb stuffing mix (crushed)
    • ¼ cup butter, melted

    📋 Instructions

    1. Split and debone breasts.
    2. Place chicken in greased 13 X 9 X 2 inch dish.
    3. Top with cheese. Combine soup and wine.
    4. Spoon over chicken and then put the stuffing on top.
    5. Drizzle butter over stuffing.
    6. Bake at 350 for 45-50

    Ingredients

      Recipe looks interesting. I’m curious about how much wine/water is added? In ingredients, wine is missing. In The directions, recipe says add soup and wine—without stating actual measurement. Thanks.

      I wonder if it would be a step better to use chicken broth instead of 1/4 cup wine or water. I don’t use or like wine. Thought this would give more of chicken flavor. I do love chicken & really want to try this recipe. Thanks!!! Enjoy your hike. Do be careful. May God Bless.
