Strawberry Chip Cake
 
 
Ingredients
  • 2½ cups flour
  • 2½ teaspoons baking powder
  • 1 teaspoon salt
  • ½ cup vegetable oil
  • 1¼ cups sugar
  • 2 eggs
  • 2 /3 cup strawberry juice
  • 1 teaspoon vanilla
Instructions
  1. To make the strawberry juice, cook 1 quart strawberries. Strain the juice into a bowl, saving ⅓ cup for the frosting.
  2. Beat the eggs and mix in ⅔ cup strawberry juice, oil, sugar, flour, baking powder, and salt. After well-combined mix another 2 - 3 minutes.
  3. Pour into lightly greased 9 X 13 inch pan and bake at 350 for 30 minutes.
  4. ICING:
  5. Two and one-fourths cup confectioners sugar
  6. One tablespoon softened butter
  7. one fourth cup strawberry juice
  8. Whip with electric mixture and spread onto cooled cake. Decorated with chocolate chips if desired.
