Strawberry Chip Cake
- 2½ cups flour
- 2½ teaspoons baking powder
- 1 teaspoon salt
- ½ cup vegetable oil
- 1¼ cups sugar
- 2 eggs
- 2 /3 cup strawberry juice
- 1 teaspoon vanilla
- To make the strawberry juice, cook 1 quart strawberries. Strain the juice into a bowl, saving ⅓ cup for the frosting.
- Beat the eggs and mix in ⅔ cup strawberry juice, oil, sugar, flour, baking powder, and salt. After well-combined mix another 2 - 3 minutes.
- Pour into lightly greased 9 X 13 inch pan and bake at 350 for 30 minutes.
- ICING:
- Two and one-fourths cup confectioners sugar
- One tablespoon softened butter
- one fourth cup strawberry juice
- Whip with electric mixture and spread onto cooled cake. Decorated with chocolate chips if desired.
