Homemade Corncakes
 
 
Ingredients
  • 1 cup corn kernels (fresh or frozen)
  • ½ cup yellow cornmeal
  • 1 cup boiling water
  • 2 teaspoons honey
  • ¼ teaspoon salt
  • 2 egg whites
  • Cooking spray
Instructions
  1. Cook corn, covered, in boiling water to cover until tender; drain and set aside to cool.
  2. Combine corn, cornmeal, boiling water, honey and salt in a medium bowl and stir well. Beat egg whites until stiff peaks form. Stir gently into corn mixture.
  3. Pour ¼ cup batter onto hot griddle coated with cooking spray. Cook 3 minutes on each side.
  4. Makes 12 3½" cakes
