Kansas Quesadillas
 
 
Ingredients
  • 1 medium onion, finely chopped
  • 1 /4 cup finely chopped, seeded jalapeno peppers or two four ounce cans of diced green chillies, drained
  • 8 - 12 ounce Monterey Jack or Cheddar cheese (2 - 3 cups)
  • 1 1 /2 - 2 cups beef - browned
  • 12 7 or 8 inch flour tortillas
  • salsa and sour cream (optional)
Instructions
  1. In a bowl combine onion, peppers, cheese, and beef.
  2. Spray a large skillet with non-stick coating.
  3. Place over medium heat.
  4. Add 1 tortilla to skillet top with 2 /3 cup of cheese mixture.
  5. Top with another tortilla.
  6. Cook 1 minute or until tortilla is lightly browned and cheese begins to melt.
  7. Carefully flip tortilla and brown the other side.
  8. Reduce heat slightly, if necessary, to avoid overbrowning.
  9. Cut into wedges.
  10. Spoon salsa or sour cream atop.
