Amish After-School Snack: Toffee Nut Bars

Ingredients
  • Crust:
  • 1 /2 cup margarine
  • 1 /2 cup brown sugar
  • 1 cup flour
  • Topping:
  • 2 large eggs
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 2 tablespoons flour
  • 1 teaspoon baking powder
  • 1 / 2 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup almonds
Instructions
  1. Preheat oven to 350.
  2. For the crust, in a small mixing bowl, stir margarine, brown sugar and flour until the ingredients are evenly mixed.
  3. Press and flatten with hand to cover ungreased 9 X 13 inch pan.
  4. Bake for 10- 12 minutes.
  5. While the crust is baking, prepare the topping.
  6. In a large mixing bowl, beat eggs and then stir in brown sugar, vanilla, flour, baking powder, salt, coconut and almonds.
  7. Remove crust from oven and spread topping evenly over crust. Return to oven and bake 25 minutes or until topping is golden brown.
