Amish After-School Snack: Toffee Nut Bars
- Crust:
- 1 /2 cup margarine
- 1 /2 cup brown sugar
- 1 cup flour
- Topping:
- 2 large eggs
- 1 cup brown sugar
- 1 teaspoon vanilla
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 / 2 teaspoon salt
- 1 cup shredded coconut
- 1 cup almonds
- Preheat oven to 350.
- For the crust, in a small mixing bowl, stir margarine, brown sugar and flour until the ingredients are evenly mixed.
- Press and flatten with hand to cover ungreased 9 X 13 inch pan.
- Bake for 10- 12 minutes.
- While the crust is baking, prepare the topping.
- In a large mixing bowl, beat eggs and then stir in brown sugar, vanilla, flour, baking powder, salt, coconut and almonds.
- Remove crust from oven and spread topping evenly over crust. Return to oven and bake 25 minutes or until topping is golden brown.
