The Amish Cook: Butterscotch Zucchini Bars
- 3 eggs
- 2 /3 cup oil
- 2 cups sugar
- 2 teaspoons vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon baking powder
- 2 1 /2 cups flour
- 2 cups zucchini (shredded)
- topping:
- 1 /2 cup brown sugar
- 1 cup butterscotch chips
- Beat eggs, oil, vanilla, and sugar.
- Then add flour, soda, salt and baking powder.
- Then stir in zucchini.
- Pour into a greased 15 X 10 cookie sheet.
- Topping instructions:
- Mix together and spread on top of batter.
- Bake at 350 for 30 minutes or until toothpick comes out clean.
