The Amish Cook: Butterscotch Zucchini Bars
 
 
Ingredients
  • 3 eggs
  • 2 /3 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 1 /2 cups flour
  • 2 cups zucchini (shredded)
  • topping:
  • 1 /2 cup brown sugar
  • 1 cup butterscotch chips
Instructions
  1. Beat eggs, oil, vanilla, and sugar.
  2. Then add flour, soda, salt and baking powder.
  3. Then stir in zucchini.
  4. Pour into a greased 15 X 10 cookie sheet.
  5. Topping instructions:
  6. Mix together and spread on top of batter.
  7. Bake at 350 for 30 minutes or until toothpick comes out clean.
